Vegan Tom Yum Ramen | 东炎拉面 | Easy One-Pot Recipe

This super easy tom yum ramen has all the flavour you could ever dream off and with all that spiciness, sweetness and sour tang is sure to wake up your taste buds! Prep time:10 minutes
Cook time: 10 minutes
(2 servings)
Recipe:
2 packages instant ramen
100g tofu, cut into triangle
2 tbsp cornstarch, for coating
1 tomato, cut into wedges
100g snap peas
2 stalks lemongrass
50g bean sprouts, blanch
100g broccoli
1 onion, sliced
2 Thai chilli pepper
3 cloves garlic, minced
1/2 tbsp ginger, grated
3 tbsp Vegan Tom Yum paste
1 tbsp brown sugar
2 tbsp lime juice
1 tbsp chilli flakes
3 tbsp soy sauce
Salt for seasoning
3 tbsp soy sauce
800ml water
Method:
1) Fry the tofu till brown & set aside.
2) Heat oil, sauté garlic & ginger, then add in onion.
3) Add in tom yum paste, cook for few seconds.
4) Add in water, veggies and seasoning.
5) Simmer and cook for few minutes, then add in instant ramen.
6) Remove from the heat and serve immediately.
