Ingredients
– 6 prawns
– 80g black osyter mushrooms
– 6 straw mushrooms
– 8 cherry tomatoes
– 3 stalks lemongrass, sliced
– 2 inch piece galangal, sliced
– 8 kaffir lime leaves
– 4 red chilies, sliced
– 2 shallot , chopped
– 2 cloves garlic , chopped
– 2 stalks coriander
– 1000ml water

Seasoning
– 2 Tbsp fish sauce
– 2 Tbsp Thai chili paste
– 1 tsp brown sugar
– 4 Tbsp evaporated milk (creamy version)
– 2 Tbsp limes juice
