Yum Mama Noodle 冬陰公仔麵窩

Ingredients:
Instant Noodle 1 packs
Tofu Puff 6 pieces (cut half)
Mushroom 20g (Remove stem)
Shrimp 6 – 8 pieces
Meat Ball 8 – 10 pieces
Tom Yum Stock 1 cube
Tom Yum Paste 2 Tbsp
Kaffir Lime Leaf 2 pieces (Remove stem & shredded)
Galangal 4-6 slices
Lemon Grass 2 stalks (crushed & cut)
Shallot 2 nos. ( diced)
Lime Juice 1 no
Thai Corriander a few
Red Chili a few
Egg 1no.(Optional)

Instructions:
1.Add about 600ml water to the saucepan. Turn to high heat, add Tom Yum stock and bring to boil.

2.Turn to low heat. Add Tom Yum Paste and stir well.

3.Add shallot, lemon grass, Galangal, Kaffir lime leaves & lime juice.

4.Add instant noodles and bring to boil.

5.Turn to low heat, add tofu puff, meatball & shrimp and cook well.

6.Add whole egg or egg yolk, sprinkle with coriander & fresh chilies for garnishing. Serve well.

材料:
即煮麵 1 包
豆卜 6 件 ( 切半)
菇菌 20克 (切去根部)
鮮蝦 6 – 8 隻
肉丸 8 – 10 粒
冬蔭上湯粒 1 粒
冬蔭醬 2湯匙
檸檬葉 2 片 (去蒂、撕碎)
南薑 4-6 片
香茅 2 支 (拍碎 及 切段)
乾蔥頭 2 粒 (切碎)
青檸汁 1 個份量
泰國芫萎 適量
紅辣椒 適量
雞蛋 1 只(隨意)

步驟:
1.煲中注入清水,加入冬蔭上湯粒、以大火煮至滾起。

2.轉至慢火,拌入冬蔭醬。

3.加入乾蔥頭、香茅、南薑、檸檬葉、泰國芫萎 及 青檸汁。

4.加入即食麵、略煮。

5.改以慢火,加入豆卜、肉丸、菇菌及蝦煮至熟透。

6.熄火,隨喜好加入雞蛋、泰國芫萎及辣椒調味。 趁熱享用。
