PB&J Cookie Bars
makes 12-18 bars

What you’ll need…
1/3 cup (80 mL) peanut or almond butter
1/3 cup (80 mL) unsalted butter
2 large eggs, well beaten
1 package FarmGirl Keto Vanilla Muffin & Cake Mix
1 cup (240 mL) fresh raspberries or chopped strawberries
1-2 tbsp (15-30 mL) granulated sweetener (optional)

What to do…
1. Preheat oven to 350°F (175°C) and line a, 11×7-inch (17x28cm) baking dish with parchment paper.
2. In the microwave or over a double boiler, melt together nut butter and unsalted butter, allow to cool slightly. Mix in beaten eggs until combined. Add FarmGirl Keto Vanilla Muffin & Cake Mix and stir well to combine.
3. Add berries; stir through to combine.
4. Transfer mixture to prepared baking tray and spread into an even layer. Sprinkle with granulated sweetener, if desired.
5. Bake for 25-30 minute or until golden.
6. Cool to room temperature before removing from pan and cutting into bars.
