Domaine de Montbourgeau, Savagnin Les Budes, L’Etoile AOC, 2019

Les Budes is the first Savagnin from Jura-based ‘Domaine de Montbourgeau’ made in a modern/reductive way (i-e. the barrels were regularly topped-up to avoid the development of a veil of yeasts on the surface). It is a wine showing outstanding drinkability and saline complexity! Right from the opening, it deploys a very savoury character, with enticing aromas of nuoc nam (fish oil), brine and beer hop, overlying an apple cider undercurrent. The palate is highly concentrated, built around a bracing and lean acidity, that merges perfectly among a broad and thick texture. This wine demonstrates a flawless equilibrium and ends with an abiding, chalky finish. It will go with most cheeses. Can drink now, but it will keep for another 20 years! 94
