Buttermilk Tea Biscuits
makes 12

What you’ll need…
2 ½ cups (360 mL) FG Low Carb Pastry Mix (280g)
2 tbsp (30 mL) sweetener of choice (weight depends on sweetener)
1 tsp (5 mL) baking powder (3g)
½ tsp (2.5 mL) sea salt (3g)
½ cup (120 mL) cold unsalted butter, cubed (115g)
1 cup (240 mL) cold butter milk (230g) *see notes below
½ cup (120 mL) grated cheese, optional (40g)
What to do…
1. Preheat oven to 425F (220C) Line a baking tray with parchment paper. Ensure butter and butter milk are very cold for best results.
2. In a large bowl, mix together Low Carb Pasty Mix, sweetener of choice, baking powder, and sea salt. Add cold cubed butter and cut together using a fork or pastry blender until it resembles coarse crumbs.
3. Pour cold buttermilk over the top and mix in to form a rough, slightly sticky, dough. If making cheese tea biscuits, add the grated cheese and mix briefly to incorporate.
4. Lightly dust a clean work surface with Low Carb Pastry Mix. Turn dough onto floured work surface and dust with more Low Carb Pastry Mix.
5. Using hands, gently form the dough into a long rectangle that is roughly 6 times longer than it is wide and about 2cm (4/5”) thick. Cut into 12 biscuits and transfer to prepared baking tray. Brush each biscuit liberally with egg wash.
6. Bake for 12-15 minutes or until golden brown. Cool slightly before serving. Enjoy!
Notes…
– To make your own butter milk replacement, add one 1 tbsp/15 mL lemon juice or apple cider vinegar to a measuring cup then fill to 1 cup/240 mL with regular or plant-based milk or cream. Stir and let sit for 5 minutes before using in recipe. .
