1tsp baking powder
1/4tsp salt
2tsp Vanilla extract
1tsp vinegar

Recipe
Step 1: Prepare the dry ingredients: In a bowl, whisk together almond flour, about 2/3 of the sweetener, baking powder, and salt.
Step 2:Separate the eggs: Crack two eggs, separating the whites from the yolks. Set aside the egg whites in a separate bowl. Crack the third egg and add it to the bowl with the yolks.
Step 3: Combine the wet ingredients: To the bowl with the egg yolks, add the vanilla extract and vinegar. Whisk until well combined.
Step 4: Beat the egg whites: In the bowl with the egg whites, add the remaining sweetener and beat until stiff peaks form.
Step 5: Melt the butter (Caution: Do not overheat): Transfer the butter to a microwave-safe container, ensuring it doesn’t get warm. Melt the butter in intervals, stirring if needed. Be cautious not to overheat it, as we want it melted but not separated.
Step 6: Mix the batter: Add the almond flour mixture to the bowl with the yolks and mix until well combined. Fold in a third of the beaten egg whites gently. Gradually add the remaining egg whites, folding until you have a semi-wet batter. Fold in the melted butter.
Step 7: Cook the waffles: Preheat your waffle iron and spoon the batter onto the iron for each waffle. Close the lid and cook the waffles for about 4 and a half minutes, or until you can open the lid without resistance. The waffles should come off easily without sticking.
