Madras Style Tiffen Saambaar and onion chutney

Madras style Tiffen Saambaar

Toor dal -1/2 cup
Green chillies -2
Tomatoes-2-3
Garlic flakes 5-6
Salt to taste
Haldi 1/2 tsp
Pressure cook all of this for 3-4 whistles remove the Perl of tomatoes mash up dal and tomatoes and set aside
In a vessel heat oil add a big handful of shallots and curry leaves fry till it changes colour add on the cooked dal mix cook on sim mixing well
Soak and pulp a small lemon size ball of tamarind
Extract the pulp well add into the dal mix simmer in low heat

Meanwhile make saambaar masala paste

Coconut 1/4 cup
Red whole chillies 3-4
Coriander seeds 1tsp
Zeera 1/2 tsp
Fenugreek 1/4 tsp
Pepper corns 1/2, tsp
Dry roast the above and grind to a coarse powder then add water and grind to a smooth paste

Add this to the dal mix and mix well add a tsp of jaggery and mix well

Tadka
Heat a tsp of ghee spluttter mustard ,zeera few whole red chillies curry leaves Few flakes of garlic crushed and two small onions slices cook till brown add in a tsp or so of hing mix well
Pour over boiling saambar

Onion chutney ( vengaya chutney)

Shallots a handful, onion 1small ,red chillies 3-4, garlic few flakes ,curry leaves a few , tamarind small piece,sauté all this In oil and cook till brownish grind to a smooth paste with enough salt

Heat oil splutter mustard zeera curry leaves and red chillies and pour over chutney

Enjooy with soft Idlis or crispy dosas or vadas
